Making stock is one of my favorite things to do. I don’t have a pressure canner, so I freeze mine - it gets used up pretty quickly, as I make a lot of soups in the winter months.
I just made/froze a big batch of chicken stock - there was no Turkey carcass to scavenge this year because Mom just did breasts in the slow cooker this time around.
BUT - all is not lost! I know I have two HUGE Ham Bones in the freezer for Split Pea Soup. :)

I was seriously depressed when ham hocks started getting too expensive. they were easy to use and provided some meat. but now I get a ham several times a year and don’t even miss the hocks!
