Refried beans are cooked pinto beans that are mashed with some spices.

In our family, it goes by the simple name of "bean paste".

Well, that sounds good. I like beans. Today I made a pot of soup (weather calls for it). Vegetable broth, navy beans, onion, celery, carrots, potato, chopped spinach, hickory smoke, and lots of chunks of ham. It was quite yummy! And if I do say so myself, it looked better than those refried beans lol.

Served with warm homemade bread and butter!

That authentic Mexican food looks so good.

So I’m going to have to travel to arizona, El Paso to get the combo plate at Grigg’s restaurant (if it still exists), and then up to Maine. I love seafood - fish type stuff - but some of the other stuff makes me nervous.

Now nobody serve up any sopapillas or I’ll have to jump in the Prius or Mini and head west!

That Meatloaf does sound yummy. I like how the onions are sauteed first, I never could understand putting them in raw, they never really cook.

Do the coconut aminos do anything or are they just for health reasons? I will have to substitute if I need them.

Just got back after hitting Wally World, but I had to walk up our hill. Apparently they’re doing some patches on the driveway. It’s only about 1,200 ft but it’s steep!

So I’ll catch my breath and go meme hunting.

Coconut aminos take the place of Worcestershire Sauce in a lot of Whole 30 recipes.

I use it in my pot roasts, too.

pinto beans mashed up and redone in a skillet with lots of lard or crisco with great mexican seasoning,such as chili powder ,garlic and cumin! ;)

Sadly, they aren't there, anymore.

There's a pretty good place in their old space, and, someone said one of their longtime cooks/chefs opened his own place in Canutillo (?) I forget.

The last two times we've been to EP we've met our group at L&J. Everyone always loves whatever they get. I remember my aunt and uncle taking us all there, as a kid. Same location, still.

I miss the Houston area where I knew many good Family owned Mexican restaurants that were amazing!

Well we have some family owned near me that I’ll go to!
In East Texas family owned places are doing great versus the chains!
Glad we have them! ;)
