My favorite knife is a kukri. It chops and splits wood better than any hatchet or even an axe. It's great for any camp project like making tent stakes, shaping poles, whatever. And it will slice a roast paper thin. I never butchered a carcass with it but I suspect it would be awesome for the job.
You could use it to defend yourself too I suppose. Gurkhas do.
I took the head off a goat with my kukri. Bought it from a farmer in Kathmandu who needed the $10 to get his wife in to see the doctor. Keep it by the front door for, well, you know.
