Actually eggs if not washed will keep at room temperature for quite a long time. I have chickens and of course they’re not laying in the winter.

I keep eggs in the fridge for 6 weeks sometimes. I just float them to make sure they’re still good before using. And of course, throw out any that are cracked.

Re: eggs - have you ever preserved the unwashed eggs using the lime water method? I haven’t tried that but it’s supposed to preserve them for many months. I have a friend who brought me dozens and dozens of eggs last summer and I’m thinking I’d she does that this year I’m going to try this.
