In my part of the South, we referred to Scrapple as Hog Head Cheese.
Basically, no part of the hog goes to waste, including the hooves, tail, ears and brains.
My Grandmother use to take the hog head and boil it and then split it open and pick out the brains to make Scrapple aka Hog Head Cheese.
Yep! That’s what we called it to!
I’d love some with soft scrambled eggs and grits right about now!...................
