I use room temperature salted butter and Hellmann’s for both deviled eggs and egg salad. A little sugar also!

Pesto sauce sounds interesting.

So does horseradish.

I’m liking some of the ideas I’m seeing here.

Can anyone share their tricks/techniques for boiling/peeling eggs without the eggs falling apart?

We’re on it here at work today! Between last night and early this AM, I made 72 halves! Served with carrot & celery sticks and Marie’s creamy ranch! Yum!

Hellman’s is superb. So is Kewpie...it can be found in Asian stores. Delicious.

Put eggs out of refrigerator for a while, room temp is good. Boil a lot of water. Put eggs gently in boiling water with tongs. Turn down water to med boil. Cook for 9 minutes. Drain and put some very cold water on them. Wait a minute. Take out and let set for a few minutes. The shells should come off easy.

Why is it called egg ‘salad’ when there is no salad in it?...............

Probably someone used homemade mayo - not a good idea for anything that’ll be ‘out’ for more than a few hours.
