This is good too :
2 (6-ounce) cans boneless, skinless salmon, drained
1/4 cup finely diced yellow onion
2 cloves garlic, minced
1 or 2 jalapeños, seeded and finely chopped
2 tablespoons chopped cilantro
2 teaspoons dried dill weed
1 teaspoon ground cumin
Pinch cayenne
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 cup bread crumbs, crushed crackers, or crushed tortilla chips
2 large eggs, beaten
1 tablespoon freshly squeezed lime juice
2 tablespoons unsalted butter
Lime wedges, for serving
Remoulade, for serving (optional)
Buttermilk dressing, for serving (optional)
Buns, for serving (optional)
Hamburger fixings such as pickles and lettuce (optional)
Instructions
Mix the salmon, onion, garlic, jalapeño, cilantro, dill weed, cumin, cayenne, salt, pepper, bread crumbs, and egg until well combined.
To assemble the salmon patties, form into 4 to 8 balls (depending on how large you want them) and then lightly press until it’s a hockey-puck shape.
To cook the salmon patties, melt the butter in a skillet set on medium-low heat. Add the salmon patties to the skillet using a spatula, and cook for 5 minutes on each side or until each side is golden brown.
I’d put a little more jalapeños.

It’s nothing more than my adaptation of the baseline cookbook recipe. (Which, BTW, I’ve upgraded to a much simpler recipe using crisped slivers of Hickory smoke Spam, yes, SPAM! Quicker and neater. I also added a tsp of garlic powder, some thyme, and rosmary and allowed bouillon instead of broth)
I only posted it in hopes of provoking MS.BEHAVIN into posting her recipe.

Linda Blair’s Stove Top Split Pea & Spam Soup

Ingredients
4 cups dried split peas, (≈2 pounds), sorted and rinsed
13 cups liquid (water, or chicken broth, or water plus 13 tsp bouillon)
4 cloves garlic minced (or 2 tsp garlic powder) (optional)
⅔ tsp dried thyme (optional)
⅔ tsp crushed dried rosemary (optional)
1½ cup chopped large onion, about 1 large onion
1½ cup finely chopped celery, about 4 medium stalks
2½ cups carrots, cut into 1/4-inch slices, or julienned, about 6 medium carrots
2 tsp salt
½ teaspoon pepper
1 can Hickory smoke Spam, thin sliced, crisped and julienned
Steps
1. Preparing split peas for cooking is easy! Just pick over the dried split peas and discard any grit or discolored peas. Place the split peas in a bowl, and cover them with water. After a minute or two, remove any skins or split peas that float to the top. Finally, rinse the split peas in a colander.
2. Add rinsed peas to 13 cups liquid (water, chicken broth, or bouillon).
3. If desired, spice with 4 cloves minced garlic, or 2 tsp garlic powder, ⅔ tsp dried thyme, ⅔ tsp crushed dried rosemary before cooking.
4. Bring to a boil (high), reduce to gentle boil (⅔ of the way between Low and Med Low) and cover for 3 hours, stirring occasionally
5. Use an immersion blender to coarsely break up the peas.
6. Add all other ingredients.
7. Cover and simmer 5 to 7 hours stirring occasionally.
8. Stir well before serving.
Expert Tips
• For peas that have been stored for years, soak overnight, drain and rinse before use.
• Used a heavy bottom pot to limit hotspots, stir occasionally throughout.
• Serve a grainy cornbread (don’t forget the honey butter or drizzle of maple syrup) and a spinach salad with fresh grapefruit or mandarin segments with the soup. The tart freshness of the citrus contrasts nicely with the rich, thick soup.
• We like ours with a lot of black pepper on the top and a splash or two of Tabasco!
I use saltines crushed up with a tad of lemon and a egg to hold it together with green onions,my seasoning are salt and black pepper,some garlic salt with parsley!
For a a little spice some old bay seasoning.
Fry in very little oil on both sides until golden brown!
So yummy and easy.
I may make them some! ha!
