My mom’s curry is a West Indian version since that’s where the great grand parents ended up courtesy of the British. Food as a whole in India is interesting. There are 2 seasons of a show “Raja, Rasoi Aur Anya Kahaniyaan” on Prime. Very interesting look at the food of India, not just curry.
I love good curry. Historically, hot spicy foods were developed in hot countries in the days before refrigeration to help mask the taste of tainted meat. Not yet old enough to make you sick, but without masking the off flavors the meat it would not have been palatable.
It’s been a controversial term, too, weighted with the heft of a brutal and extractive colonial rule: One economist estimated that $45 trillion was stolen from the country under the British, and former Under Secretary-General of the U.N. Shashi Tharoor wrote that the “British colonial holocaust” took the lives of tens of millions of Indians by unnecessary famines.

And you cannot overestimate how many lives were saved by things being peaceful enough that farmers could farm (for a counter example, see Somalia).
I thought this was about the Podfather Adam Curry
I love me some spicy curry.
Hurry makes curry.
Except for the three square feet of the globe I occupy, yuck!
Well, maybe that's a little harsh, but I've had very few curry dishes that had me going back for seconds.
I’d rather have saffron.
It does stain a bit but so what, smell good and attracts lovely Indian ladies.
For the completely uninitiated it’s a good background.
A couple of things were skipped because of the historian concentration on the subcontinent of India.
Of further interest is that curry as a sauce or seasoning originated and became a pub sauce which according to Leigh & Perrins was further developed into Worcestershire sauce.
Old Bay is essentially, rubs, shaker salts etc... are currys.
I use Cajun two step. They call that seasoning it’s really a curry by definition. Just like a Cornish lunch are the origins of a Mexican empanada. It’s all Fusion at some point.
Fried Chicken comes from Scotland the seasoning - Africa Caribbean connection.
Curry’s are like a spice pandemic... carried to the 4 corners, of a round globe. by traders...
After years of figuring things out and a stint as a military cook, I have learned that curry (by any other name) is just like every other staple...
Every country has its pancake just as every country has its hot sauce (or spice sauce or if you will, “curry,” roux, gravy... spices will vary).
