Pitch and roll are measured by gauges. But there is always a manual backup in case of control panel failure. That's the pitch bubble above my head.

This was the fairwater planes (on the sail) station (or bow planes in some boats) - controls depth. Stern planes to the left, controls angle (pitch). The waves and your depth below the surface controls roll.
