Are the veggies soft and soggy after thawing? Can you roast them or are they only good for stews and sautes?

Because I’m getting all sorts of ideas... one of my favorite veggie sides is to cut cauliflower, large dice red and orange bell peppers, and large dice red onion, toss with EVOO plus S&P and roast at 400 for about 30 minutes. I’m wondering if I could pre-cut everything, vacuum seal and freeze, and then roast the same as usual.

What about zuccnini? I tried freezing some slices and they were horrible, had to throw out. I only grow the Italian romanescu kind that are ridged.
