Stereos and A/C controls you can feel the buttons on and make changes without looking at a screen. (Though listening bluetooth connected through my phone does away with that problem on stereos using voice commands.)
Leg room in the back seat while still having plenty of room in the trunk.
Factory supplied car jacks that actually lift high enough to change a tire without having to tote a brick or two to put on top of the jack.
Metal door openers that don't break from too much use.

As I recall, even back in the 70s there were some Chevrolet models that required you to disconnect motor mounts and use an engine hoist to lift up the engine a few inches so as to reach some spark plugs.
And cheap leaded gas.

A full day to change if they do not separate or strip out, Mine only had about four turns of engagement. Use a torque wrench to REMOVE!!!
I might add the dual purpose jack handle isn't long enough to provide enough leverage to loosen the lug nuts for many people.
Knobs and levers — absolutely! You could find the few you needed without taking your eyes off the road and know the control position by feel. We have a small Mercedes SUV and the fan speed controls are black buttons down low on the panel. The buttons are the size of a pencil eraser and have faint white symbols on them. It is absolutely impossible to use them while driving. The designers are idiots.
My ten year old Tacoma has buttons on the left side of the steering wheel to change the volume and channels on the stereo. Very easy to use. On the other side is the Bluetooth controls to answer the phone through the stereo.

All design engineers should spend one year working in a garage repairing cars they designed the previous year. It would change their designs. When they changed engines sideways and forgot about how to get to a spark plug without seeing it and all by feel it was a sad day.
The reason a 55000 dollar car has a jack that is worth 5 dollars is they ran out of 3 dollar jacks.
