Chef John is a good youtube channel. His chili relleno pancake recipe is great.

His voice drives me nuts. It has a weird cadence to it.
I can read the recipes and do them but his videos give you tips that are generally not included in the written ones.
So I grit my teeth and listen.
The pork roast in pumpkin was worth it.
