I’ve only been in Phoenix for 3 years, and am sometimes thrown off by fake mid-century modern signage. I am not sure where Old Towne is, though I have found older places on 7th Street (though its queer near Indian School Road) and Sunnyslope (though Little Miss Bar-B-Q was a fake Mid Century Modern place). In Tempe I came upon a 7-11 whose signage and store style goes back to the mid-60s. Nothing special to eat there, but still interesting if you want to film a ‘60s movie with an authentic looking store in the background. East Camelback and Indian School are a mixed lot.
In New Haven, if you order a traditional apizza in Sally’s and some others, you get crust, sauce, a sprinkling of parmesan. Mozzerella is an option, though a common one. But plain crust and plain fresh sauce can still make a delicious apizza.
You still haven’t told me what your “go to” pizza joints are in Phoenix. Streets of New York is a fraud. Uncle Tony’s is marginal. MOD and Fired Pie are chain-style fast “gourmet”. I’m still working Phoenix out, and I live with three people who can’t have dairy, so testing is sporadic.
Not in Phoenix.
NW AZ.
BTW..dont ya just hate them fake places?
If I were you, I would try and find out if there is an Italian community down there.
Here is what I found.

Grimaldi’s is pretty good - several locations around the Valley including Old Town Scottsdale. One of the few that doesn’t give me an immediate stomach ache. :)
I’ll give Grimaldi’s a try. I’m surprised they can still install new coal ovens, especially since they have at least one restaurant in California. Coal is an excellent way to cook pizza, though.
I would think that recipe would make for a dry, crunchy crust. Adding some sugar acts moistness to the dough that affects how it cooks.
I like doughnuts, Mac and cheese, and pizza; however, I do not like them blended together.
I love Neapolitan style pizza. Just enough, not too much.
Why can’t they make a low salt, high-fiber, low LDL, high animal protein, high good fat donut, with...
TASTE?
Forget going to Mars until we fix this issue FIRST.
Uh…no thanks!
Ya know...when a person thinks about it, all pizza is, is a leavened bread with toppings on it. Hearty since there is veggies on it, and with the modern pizzas they load them up.
Like I said..I like the old school pizza.
