I’ve had several requests for my pizza dough. Easy peasy. I use Einkorn flour and well water. Purified water would be okay. I haven’t made it with any other flour but probably okay. Mix one cup flour with 1 1/4 warm water (see above) and 1 teaspoon active dry yeast and 1 teaspoon salt. Let it sit at room temp for 15 minutes. It should bubble. Mix four cups flour and two teaspoon fine ground kosher or sea salt. Mix till flour is moistened. Turn out on floured surface and kneed for two or three minutes. Put back in the bowl, cover with plastic wrap and let sit at room temp for two hours. Punch down and divide into four balls. Spread out to pizza dough size. In the meantime, heat over to 500 degrees and put two cookie sheets in there to heat up. Put all the fixings you want on the pizza dough and transfer to the hot cookie sheets (that’s the hard part) and put in oven for 6-8 minutes. Watch carefully. Serve.
