Some Wisconsinites may know cannibal sandwiches because they're a family tradition — or because of the warnings from the Centers for Disease Control and Prevention.
Cannibal sandwiches are a Midwest staple. Consisting of fresh raw beef on rye bread topped with chopped onion, and a sprinkle of salt and pepper, the dish makes some squirm and others lick their chops.
Last December, the popular dish even gained international attention with a tweet from the Wisconsin Department of Health Services that warned against eating raw meat.
But where did the tradition come from? Why is it so popular in Wisconsin?

When you go to the actual store you can see them making the cheese while you wait to be served. Store front is so small it can only hold around five people at a time.
Both stores are very reasonable. Especially when you consider the quality of the product you are getting as compared to a grocery store. Shipping and handling is not bad either. We order around Christmas and make it a holiday treat.
Had never heard of it until moving to South Texas. Almost every gathering around here serves it.
I'm told that the lemon juice "cooks" the raw meat but I'm not convinced. I always think of worm eggs. Yuck!

I used to date a girl that lived in Wisconsin. I’d come home with 10# + of various cheeses and sausages every time I went up there

That sounds delicious! I have always like steaks “practically still mooing” anyway.
I used to sneak bits of raw hamburger when I was a teenager and we were having burgers.
What I really loved was a bit of the seasoned raw meatloaf. I’d often sneak a morsel when Mon wasn’t looking before it went into the oven.

My wife, from the next county over from Milwaukee, says that she has never encountered this. I’ll have to ask here (German) mother.
When my family raised beef (grass finished), we had the Mennonites butcher the ones we ate.
I loved me some ‘cannibal’ sammiches. Diced onion, pepper and salt on bread with the raw burger. Yum! Better than a hamburger. Sometimes some fresh home-grown diced maters on there too! Maybe some diced dills in there as well.
Mennonite know how to fish too!
And they make damn fine cheese.

I have lived in Wisconsin for all my life and most every Christmas party I ever went to had Raw ground meat on the hors d’oeuvre line. I like it best on a slice of Dark Rye and a slice of Raw Onion A little homemade Horse Radish makes it more tasty.
