Why did the raw meat cannibal sandwich become so popular in Wisconsin? And why has it stayed that way?

Some Wisconsinites may know cannibal sandwiches because they're a family tradition — or because of the warnings from the Centers for Disease Control and Prevention.

Cannibal sandwiches are a Midwest staple. Consisting of fresh raw beef on rye bread topped with chopped onion, and a sprinkle of salt and pepper, the dish makes some squirm and others lick their chops.

Last December, the popular dish even gained international attention with a tweet from the Wisconsin Department of Health Services that warned against eating raw meat.

But where did the tradition come from? Why is it so popular in Wisconsin?

ribeye marinated in secret Filipino sauce, he called it “gili gili”

I don't know gili gili sauce, but besides heat, the most pathogenic bacteria can be controlled by pH (ie. acid) and also water activity (salt). I would bet this sauce has both.

Just to be clear.   Do you mean that the person you knew was one of those world famous US Navy Filipino Stewards who served in our US Navy Submarine Fleet, or just some Filipino guy who made submarine sandwiches?

If it was the highest quality ground beef from a good butcher who knows it’s too be eaten raw, sure! I love carpaccio and sashimi so that looks good. Not crazy about the name, though. Cannibal?

I use a local small town grocery/butcher shop

They grind it fresh or go in the back and cut off or grind anything you want

But sure can’t afford a stack of 2” Ribeyes any more

That looks like supermarket grind. Scary to anyone with more than a room temp IQ. If you grind your own it is pretty safe, but supermarket grind is scary as hell.

The problem is the amount of surface area. All the surface area is like the surface petri dish. All the time at the grocer is a very long incubation time. Refrigeration slows down bacterial growth, but does not stop it.

Grinding your own while still cold has the same surface area, but if served quickly thereafter there is no time for the nasties to grow.

Raw meat is quite popular in parts of Italy and France.

Wouldn't a cannibal sandwich consist of ground humans and not ground beef? Can't say I've seen many steer amble up to the deli counter asking for beef on rye.

Sounds very much like a meni item called Steak Tartar (a dish consisting of raw ground steak mixed with raw egg, onion, and seasonings)

They served me this by mistake at a restaurant once and I could not stomach it. :D
