I barely passed algebra so what amazes me is that all these scientific assumptions are made using mathematical equations. I would love to see the chalk boards where they drew it all up........

The problem is worse than that.
There is no way of proving that the real world is accurately described by mathematics at all—it may be describing a mathematical construct (like a hologram) that is just the surface with actual reality hidden from view.
