I thought packaged beans last forever but they still are dated?
Packaged beans (like in the 1, 5, 20, 40 lb) in plastic bags need to be packed in either glass (mason jars), tins, vacuum sealed or mylar/vac sealed (w/oxygen absorbers, if not vac sealed), to last past a year (or, so).
This keeps them from turning dark and getting bugs in them.

No they don’t even last forever if stored for long-term. It was recently decided they will last 30 years now, used to be 10. They would still be edible but start losing nutrients at that point.
I used to buy different types of beans at WinCo, in their bulk section. I found out in a hurry that you can have beans that are too old. Apparently they didn’t rotate the stock much if it didn’t sell. When they cooked up the Skins were wrinkly and the beans never softened. You can remedy that by adding some baking soda to the water but I think it made the beans taste strange.
