I’m not a lawyer but I’ve dealt with issues similar to this in a corporate management capacity. The legal rights and obligations of an employer typically relate to WORKPLACE SAFETY first and foremost, not PERSONAL HEALTH. If the benefit of taking vitamins is that you are more healthy than if you don’t, then that wouldn’t be legal. If the employer imposes measures aimed at protecting customers and other employees and/or protecting you from an injury or illness that you get while working at your place of employment, then the employer has far more latitude. So, then it is possible that an employer can also legally demand that employees take, for instance, the regular flu shot as a condition of employment. Or can they? This has all the makings of a dangerous, liberty-stripping, slippery slope.

That's exactly right. The government restrictions that have been imposed during this COVID fiasco have opened a can of worms that we never even considered before.
This is why I think any employer that can have staff work from home would be foolish to ever let them back in the office. It just makes so much sense to continue that operating model not only from a cost standpoint, but to minimize employer liability.
