I know on Weight Watchers, people make ‘pancakes’ by whipping bananas and eggs together to make a batter. I’ve never tried them, and I don’t know how the taste would be as a tortilla!
I’ve been pondering your Mexican food dilemma. How about fajitas, made with bell peppers and chicken, beef, or pork? You can season with cumin and oregano. Fresh cilantro. Unless it’s the cumin and oregano in the chili powder you can’t have. They are good wrapped in tortillas, but i can’t think of an alternative..
