You could make tortillas out of cheese or pork rind crumbs.
Or make a thin cloud bread and make a tostada.
As for the onions...how many you gonna consume in one sitting? I know they have carbs, but it’s not like you’re gonna eat 3 whole onions in a sitting, like I ate 3 whole apples in one sitting. LOL
Not about carbs, it’s a medical diet (bland)
