Im only half watch the news.. and only via FR. I think the next few weeks will hopefully clear up the cobwebs.. Either we will be doing cartwheels and happy or buried so deep in the muck we feel totally defeated.

DJstex.. I know how you must be hurting for your family. So young. Disease is not a respecter of age or good quality of character.
margaritas..... I am not a fan of the syrupy sweet ones in the bottle or from most mexican restaurants. MOST good mexican restaurants will make it for your from scratch. The cost is about half a pitcher.. but I would rather have one good drink than a half pitcher of GOOD.. but inferior.
The scratch ones include one fresh lemon, lime and orange. Agave. Good Tequila and good orange liqueur. Also for the fruited ones FRESH whatever. Mango, strawberry, raspberry. I have made my own pica de gallo (my choice for salsa) and use a bit of it when I make Guac.
My mexican cheese of choice is chihuahua. Use it to fill enchilladas or grate atop food. In chatting about food I was just thinking Ive been missing Carlo since his death. Used to keep up with him here at FR and on FB. He was a diverse and great guy.
I am not a mexican food expert. I hear the word authentic mexican.. not sure I have had it or would recognize it. Just know what I like and dont like. Years living in Houston I had Mexican often. Authentic? who knows.
I love to make my own chili beans & own Mexi rice. MY go to entre is Enchiladas with cheese and now and then a little bit of spinach. I positively LOVE Mole sauce.
Yeah, we vegetarians are boring. Veggie Fahitas are great but I dont have them often.
Tonight is pasta night here. Jen will have linguini; shrimp, spinach, carmelized onions in a white wine broth. Ill have a bow tie pasta mac/cheese. She works tomorrow and has to be up at 4.
I still have to catch up on the thread.. I do just mostly skim the political mess for now. Nothing I can do except be annoyed. WE are people of hope and faith. Satan is throwing a lot at us to undermine. Glad we have each other here. Its a lonely world “out there”

I was born and raised in Houston also and loved making all sorts of Mexican dishes. I still now and then make some mean tacos my family enjoys.
