I didn’t know about the acid part. At one time I thought about making soap at the cabin, using the wood ash from the stove.
I’m finding way too much technical information, lots of chemical equations. I just decided to cut the fat and the icky looking stuff off. That’s what I normally do but it takes forever. I was wondering how others cooked chicken thighs because it seems that someone that’s not fond of cooking wouldn’t go through all that trouble.
And that would be me, not going through the trouble. LOL
And I remembered why we had the vinegar for soapmaking. It was to neutralize the lye if our skin came in contact with it.

If they have skin on and I want to slow cook them I just peel the skin off (comes off easy) then rinse, pat dry, and throw in CP (Don’t want all that fat in liquid). If I want to fry or bake I leave the skin on. I don’t like cooking so I don’t fuss over any of it.
