Hmmm....two things popped into mind. Now, my chemistry was probably further back than yours (mine was high school!).

One, is soapmaking. To make the soap, you mix fat and an alkaline. Then you can add an acid to stop the reaction. I think.

I’ve used vinegar to cut soap scum.

I didn’t know about the acid part. At one time I thought about making soap at the cabin, using the wood ash from the stove.

I’m finding way too much technical information, lots of chemical equations. I just decided to cut the fat and the icky looking stuff off. That’s what I normally do but it takes forever. I was wondering how others cooked chicken thighs because it seems that someone that’s not fond of cooking wouldn’t go through all that trouble.
