That would definitely taste better. I was trying to think of the chemical reaction between an acid and fat. I might need to do some searching, my chemistry classes were a long long time ago.
Hmmm....two things popped into mind. Now, my chemistry was probably further back than yours (mine was high school!).
One, is soapmaking. To make the soap, you mix fat and an alkaline. Then you can add an acid to stop the reaction. I think.
I’ve used vinegar to cut soap scum.
