Just as we here in US have different cuisine in different regions, so does Mexico.

True. I’ve been to Mexican restaurants in different parts of this country and the owners are from Mexico, but “authentic” is whatever region they came from. I noticed food in Monterrey was a lot different than Juarez.
As for here, I love our texmex, but I also love the Arizona Mexican food. You have posted pictures of some plates at a restaurant and I wanted to hop in the car and join you. California has a variety, it seems the higher end catered more to Californians, but I found a few that made food I liked. And then there’s the taco trucks, I do like tongue burritos and street tacos. A good place for street tacos and other dishes is on Fremont Street in LV.
I s/h been a food critic, 😜

Most people think of Mexican food as rice, beans, tortillas and salsa. They forget there’s 1700+ miles of shoreline in Mexico just on the Gulf side. Probably longer on the Pacific side. Seafood plays a big part in Mexican food.

So true, and it's great to experience all these different foods.
Our TeX Mex is so different than some of the cuisine of my Mexican neighbors in Houston/Baytown area. I work with this girl that was telling me how they use and cook a cactus and always wondered how they use it. Interesting to say the least, but always open to try some things, with the exception of a few. ha!

Lincoln Project Liz.....good one.
She doubles down on Trump Derangement Syndrome after the party in her state pretty much told her she’s not liked. I don’t understand what these anti-Trumpers think they’re working toward. Her and Kinzinger seem to be living in some kind of strange bubble.

I find that no matter where I am I just like Mexican food period.
However, some more than others.
I remember back in the early 70’s when my folks lived in Dublin, CA, they took us to a hole in the wall Mexican restaurant that you had to go thru a Chinese grocery store to get to.
IIRC it was in Hayward, it was always packed and the food was very good.
The serving area was a long narrow room with 2 rows of picnic like tables.
The waiters were real characters and enjoyed joshing the customers in a fun way.
Does this ring a bell for you?

Breaking: House Republicans are requesting that FBI Director Christopher Wray hold a briefing on democrat Eric Swalwell’s past ties to an alleged Chinese spy --
asking that lawmakers be informed of the "full extent" of Chinese targeting members of Congress. An FBI Director shouldn't have to begged, coaxed or pushed into investigating possible (likely) spying within the government by foreign agents.
The fact that the Biden admin. didn't move immediately to replace Christopher Wray as FBI Director pretty much tells us all we need to know about Wray.

I don't like Chorizo but my youngest daughter does. She'll make breakfast burritos like her dad did. Ugh! Never tried the cactus, but then not a fan of cilantro herb either.
I'm more basic I guess. ha!
Jalapenos, onions tomatoes and garlic and chili powder.

I eat chorizo more often than bacon and sausage. And I love cilantro. The world would be boring if we all liked the same things. 👵
