You sound like you’re feeling a little better! I hope you are.....triple cheese potatoe pancakes! Yowser, they sound good. So nice that you and Jen can be company and help to each other.
Actually feeling about same but trying hard to hold my own here at Jenny’s place and contribute the little bit I do.
The three cheese potato pancakes is a recipe I developed. As with most scratch cooking, the prep takes longer often than cooking. I hand grate 3 medium potato - skin on, well scrubbed. Do the soak in ice water (in todays weather, that means out on back porch for an hour or so) and then the squeezing out of liquid.
Add to a new bowl 1/2 medium sweet onion hand grated(somehow this adds more flavor/liquid to the pancakes) rather than chopped. mix with two whipped eggs - I do jumbo, Seasonings to taste (experiment with herbs). add the aqueezed dry potatoes. 1 and half cup of cheese. I always do a mixture of three and always hand grate. The pre-grated cheeses are easy but because there is an additive to them so they dont clump, they also dont melt as well. I pick from a variety .. sometimes leaning mexican, sometimes Italian & now and then totally unhealthy but wonderful velvetta alone. If you like fire add some Texas pete or hot pepper flakes. Add enough flour to make it not runny. Dont over mix. NEVER use a mixer. Just hand.
Cooking method impt for great potato pancakes. Use a combo of butter and oil.. I usually use olive. make sure the oil is quite hot. I cook on Med/high. you want them to brown nicely on outside and be tender and softer on inside.
Serve with various things.. If youve made it with Mexican seasonings and cheeses, serve with sour cream/french onion dip, salsa and guac. If Itlaian oriented marinara mixed with sour cream is nice. If traditional we do the sour cream and apple sauce. my brother loves ketchup on his. I do a nice sour cream mixture with additions of Yum Yum sauce, horsy creamy sauce, etc. Again experiment.
One of my favorites was sour cream and poppy seed. Sweeter and different but tasty with applesauce on side.. Now and then I add crumbled well cooked bacon to Jennys. Mixing a bit of coarsly chopped good quality dill pickle to a sour cream is a nice alternative.
