Apart from ham-and-swiss sandwiches on dark rye, we like to make ham salad, before the inevitable soup (split pea last ham, so navy bean this time). Had Denver omelets this morning.
Don’t forget a big pot of pinto’s with the ham bone (leave plenty meat on it) and a pan of cornbread on the side. (Don’t you dare put sugar in that cornbread!!!)
Fried potatoes and greens with vinegar are lagniappe.

Best use of leftover ham is to cube it and put in omelettes with some swiss cheese and mushrooms.

The secret to split pea and ham soup is a dash of sherry.
Tonight is pintos cooked with country ham and collards and cornbread. We got a really good deal on Daniel Boone Inn country ham which is the saltiest ever. It is best cooked in things.
Made a very large rib roast
I’m eating great sandwiches using sourdough for a few days, no problem at all. Ham sucks.
