I had a calamari salad (cold!) in Pescara that I would likely kill to get the ingredients list.
No, just the info on how they cooked the calamari and chilled it so it wasn’t like rubber bands.
Yeah...that I would kill for.

Soak the calamari in milk to tenderize it before you cook it.

You can soak calamari in lemon juice for 30 minutes to tenderize before stir-frying or deep frying. And just a couple of minutes to cook. Much longer than that and it turns to rubber.
