“I’ll have to adjust the recipe so my diabetic Favorite Son will be able to eat it.”
LOTS of low-glycemic index sugar replacements out there that aren’t poisonous. Do a bit of advanced research and in-kitchen testing...
Yeah... I know, I know... Dosh garn it, ya gotta make yerself a pie, or three over the next several months to be sure you’ve got it right.
You’ll get it, though, and the results will be as good as Gramma ever made, but without the glucose hit.
A FRiend of mine told me about a sugar substitute that wasn’t poisonous, so I tested it on some pineapple upside-down cake. The stuff was delicious, and you’d never have known it was a sugar substitute. So, since I’ll be living within a mile of my son when I move, I plan to keep the stuff on hand.
I can eat it, too, and though I’m still hypoglycemic, the doctor told me 40 years ago that my pancreas could stop making insulin at any time, which is what happened to my then-hpyoglycemic Favorite Son, and the older I get, the closer I get to that time. So I’ll try to lessen the impact some.
Trust me: no way I’m gonna give up pumpkin pie!
