Gained a new appreciation for yams recently.
Went and had dinner with some friends I hadn’t seen in a decade. Rhonda diced up a half pound of bacon, did not drain it, added 3 large yams peeled and diced, large yellow onion diced, and two tablespoons of minced garlic. Various salt/pepper/oregeno and some judicious frying later... Delicious...
I brought some ribeye steaks from Sam’s Club. Had used a Kentucky Steak Shake seasoning that has large salt grains in it. Let that sit over night in the fridge so that it soaked all that flavor into the meat. Charcoal grilled to medium-rare perfection.

Yep. The yams of today’s efforts enticed me to freeze them in smaller portions for later use. Makes me think I’ll keep yams in my pantry. Next time, I’ll try some onion into the mix. I mean, a yam is just a sweet potato, and one should be able to fix yams in ways similar to potatoes. Sweet potato fries are quite yummy!
