Just happen to have half a shoulder of ham left. Trying to run through my head, how I'm going to approach my wife about someone on the internet tellin' me we could eat those kudzu vines taking over the backyard fence.

I can here her now, "Well, I'm not going to eat them! You can eat them if you want to!" Lol

I'll cook up a small batch first, I think...:)

Back when I was convinced bird flu was going to do us in, I made some for my family. It got a thumbs up, but the texture of spinach was preferable.

We have a lot of poke weed too, but I’m nervous about it because at some point it becomes poisonous. I think Kudzu just becomes inedible.

Please do your own research though. Personally, I’m a bit nervous about trying new things now that my healthcare system is full of cv patients. I’d hate to end up in an ER with an allergy.
