Back when I was convinced bird flu was going to do us in, I made some for my family. It got a thumbs up, but the texture of spinach was preferable.

We have a lot of poke weed too, but I’m nervous about it because at some point it becomes poisonous. I think Kudzu just becomes inedible.

Please do your own research though. Personally, I’m a bit nervous about trying new things now that my healthcare system is full of cv patients. I’d hate to end up in an ER with an allergy.

Wife does her field pickin early in the morning.... we have wild onions and mustard now, violets and dandelions popping...I wrote a poem about her doings ons:

Beauty Walking

Too early
To be in the field
Covered in dew
Walking the mowed lane.

Veering left
Now bending
Then step right
Stooping
Picking.

Clover for tea
Dandelions for salad
Purple violets
On toast
Smeared with honey.

She calls it foraging
Wild things
That are good to eat.

I call them weeds.
