Seafood in Arkansas. Sams/Walmart/Kroger (LAST WEEK) were out of all red meats, pork, bacon, chicken, et. al. However, FISH was everywhere. I went to Sams Club and bought a big bag of salmon filets, tilapia, catfish, cod, halibut, and shrimp. No shortage there!

Caveat: This week, all meat back in stock as per new stocking hours and new stocker hires.

This country could feed the world. We won't run out of food.

I ESPECIALLY like seafood, especially shellfish.
I had a crab cake and stuffed clam for lunch and cooked whole shrimp for dinner. YUM!

In my area meat is starting to get back to normal but is still limited selections of certain varieties, the most common items seem To be reliably have at least a limited stock. In talking with an employee, the issue isn’t not enough food in the supply chain or at the warehouse, but not enough employees at the warehouse is to pick and load trailers to deliver, they have plenty employees in the store at the time to unload the trucks but the warehouses don’t have enough employees to ship all the needed items. They said the paperwork is showing that they ordered, say 120 cases but only received 30 or Or so cases Are coming in, the other ones are showing as canceled by the warehouse due to time constraints.

How do you cook Tilapia? My cooking turns out watery Tilapia, but the salmon comes out perfect. I wrap it in aluminum foil with salt, spices, drops of lemon juice and teaspoon of butter. Then place it on a hot iron plate. Salmon comes out flaky, dry and nice. Tilapia is watery and not solidly flaky.

Been to Walmart and Harps in Arkansas several times in the last two weeks. Only things missing were the usual toilet paper, wipes, rubbing alcohol. Bleach and dish soap available. Flour is in short supply, but that was about all. Some bread shelves empty but lots of tortillas available. Plenty of canned goods available.

Plenty of fresh vegetables and meats, both fresh and packaged.

Speaking of fish, Washington state has outlawed sport fishing. Oregon went along with them and co-outlawed fishing on the Columbia River.

fish cant be stored unless frozen and even then will freezer burn if frozen to long. that’s why you don’t see much stocking of fish...real question is how much canned fish like tuna or salmon was on the shelves.

That’s everywhere. Meat freezes while most fish is best fresh.

In canned veggies all that’s left is cut green beans, sweet peas, weird stuff.

Soups all creams of something. Except at holiday season, cream of mushroom and chicken disappear.
