YUM. I have been craving ham & cheese omelet all week, and am even going to buy ham on my way home from work, so I can actually make one.

I was reading yesterday, that it is best to let the egg mix sit for 10-15 minutes after whisking, before cooking.

Having never been very successful making omelets, I don’t know if this helps or not.

Julia Child had a good show on making omelets. It’s probably on line. There is a trick.

I use heavy cream instead of milk to make omelettes. Nice and fluffy. I don’t measure anything. Crack how ever many eggs you'll be using into the bowl. Pour enough cream to cover the yolks. Salt and pepper. Use a fork to mix it, enough to incorporate all of the yolk into the cream.

The pan, i start it in high to melt the butter, take it off of the burner while I’m mixing the eggs , reduce heat. The initial high heat will subside, but it helps to get the the eggs to set, once you pour your mix in.

Melted butter will be floating on top of your mix. Gently pull egg back enough to allow floating butter to seep down, add whatever filling you want, continue to pull back edge to allow butter and egg/cream mixture to seep below.

Once it looks firm enough, I’ll fold it in half and after a bit flip it over . Easy, lol
