Baby carrots, bah! A few years ago, at the Hatch Chile Festival in New Mexico, I met a guy who sold agricultural processing equipment. One of his products was a baby carrot machine. "Baby carrots" are not young carrots -- you just have to taste one to know. Real baby carrots have a more delicate orange color and a much more delicate carrot flavor.
To make "baby carrots", or as in the photo, "baby cut carrots", processors take big carrots, cut them up into small carrot sticks, and then send them through a polisher, very much like a rock tumbler, to round off the edges. Kids seem to like them, nonetheless, and they're very convenient.
