Yam. I’ve been wondering what to do with all those green and red peppers coming in from the garden. They’re the very last of my produce.

Fried peppers, pepper & egg sandwiches, sausage and peppers, peppers in salads!
Pardon me if you aleady do this with extra peppers, but when I buy a multi pack of them or have too many given to me, I clean them and dice them and freeze them in ziplocks. Then I just add them as needed to various dishes I make. They keep a long time and are really handy since they are already cleaned and diced.
