So where does the sun go when it goes down on a flat surface? What lurks under the flat Earth? Ahh, beasties be there.

It doesn't go down, it goes away from you.

Or do you think the poles, tracks and fence are going "down" or that they are shrinking?

The rays would be straight down, not at an angle like they are. That's a local light source.
