Here it comes - LOTS of work and probably 10,000 calories. Enjoy!! (you’ll have to pick out the ingredients) - you can probably get 2 or 3 chicken breasts, microwave them and shred them. I’m gonna try for that next time. This one almost includes the kitchen sink. Cooking is a relaxing thing for me. Cleaning - well .... NO Apologizes for typos - I’m hurrying to get it to you.
Sour Cream lime Cheesy Chicken
1) 4 tbsp finely-chopped white onion, butter and soy sauce in non-stick skillet. Brown the onions.
2) Keep the heat just below medium (about 40% power - or 4 out of 10 - maybe 3.5)
3) Add 1/2 package of cream cheese - diced into large chunks.
4) Spread the cream cheese out as it starts to melt.
5) Add in 3 - 4 tbsp of sour cream
6) If you want, add in about 1 or 2 tbsp of Ranch Dressing
7) If desired, add in about 1 or 2 tbsp French Onion dip
8) Cut a fresh lime in half and squeeze the juice into the skillet - I use a knife to get bits of the lime from the inside into the skillet (and the red cabbage later)
9) Add a pinch of salt, a couple pinches of black pepper
10) Add a teaspoon of onion powder
11) Add a teaspoon of garlic powder
12) Add some dried cilantro flakes
13) Add some dried parsley flakes
12) Keep stirring with each new ingredient
13) Add 1 or 2 green onion scallions - chopped (green part only - use white, chopped in #1)
14) Add in chopped chicken - small pieces - you can shred a oooked chicken breast (2 preferably)
15) Stir thoroughly and reduce to low heat (1 out of 10 on power)
16) Top with a bit of shredded Colby Jack cheese sprinkled all around
Red Cabbage Topping:
1) Finely-shred 1 head red cabbage head - SET ASIDE
2) In large mixing bowl, put 1 tbsp EVOO
3) Add paprika (1 tbsp)
3) Add 2-3 tbsp of mayo
4) Add 1-2 tbsp of Ranch Dressing
5) Add 2-3 tbsp sour cream
6) Add pinch of salt & garlic salt, 2 pinches of black pepper
7) Add juice from 1 lime - cut in half and squeeze!
8) Mix above ingredients 2-7 thoroughly
9) Add red cabbage to mixing bowl and mix thoroughly - coating all the red cabbage
10) Put mixing bowl in fridge
Corn Tortillas:
1) Warm skillet to 4 our of 10 on power.
2) put 2 -3 pats of butter in skillet to melt
3) Add 2-3 corn tortillas depending on how big your skillet is
4) Brown at least 30 seconds to 2 minutes each side (as you prefer) - Slight bubbles will form
5) Add in more pats of butter every 2 - 3 pans of tortillas
Assemble 1 corn tortilla, a tbsp or two of chicken, put some red cabbage mix on top
