You weren’t getting enough sodium. Your sodium requirements go up quite a bit on keto and often just extra salting food isn’t enough. When your body can’t enough sodium it can’t manage water in the body, thus leading to headaches from dehydration.
It’s often called the keto flu:

I ate nothing but spinach and cucumber + Kale juice for 30 days and lost 37 and a half pounds. That was a year ago and only gained 7 pounds of that back.
More fluid intake is required for this type of diet. A lot more metabolic processing is taking place to deal with the proteins.
This is essentially the Atkins type diet, although Atkins never really advocated high fat. His focus was really on carbs. The initial phase was for 2 weeks only and the long term goal was to learn how much carbs your body could handle.
My solution to the “Atkins flue” was to simply reduce the carbs gradually until I got to a stage where I lost a few lbs. and was no longer gaining weight.
Within one month, all my lipids went to healthy levels. I increased the fats: organic butter, whole milk, nuts, and EVOO and Proteins. I had followed the AM. Heart Association/DASH diet advice for years. These were the first normal readings that I had for 25 years.
Conceptually, the sugar/carbs are like an addiction, and when you quit cold turkey, you’ll have withdrawal symptoms. Using the gradual reduction, my body adjusted without major problems.
My goal was not really weight loss per se, but simply to achieve healthier lipid profile without Rx.
Your gut bugs will make you suffer if they arent fed. Also, you may have a lot of bad bacteria craving sugar. As they switch, as you slowly move low carb, the bacteria pop will change and you will get more kinds who crave fat. No more headaches from low sugar (they consider most carbs especially processed ones to be sugar).
A coworker went on a low-carb diet and started getting migraines
My kid is diabetic. The headaches were caused by ketoacidosis. The remedy is large amounts of water. When fat is metabolized, its byproduct is ketones. Peel an orange and smell it. That’s ketone. You can buy a variant at the hardware store - methyl ethyl ketone (MEK).
Without the water, life gets a little tough.
