Fox News Eric Bolling sent pictures of male genitalia to at least three female colleagues, according the Huffington Post. The website cited 14 unnamed sources in its report, including the women who allegedly received the lewd text messages.

The women made up of his former and current network co-workers were able to identify Bolling as the sender behind the lewd photos because they recognized his phone number, according to the news site.One of the recipients said she told Bolling to never send her such messages again, but didnt receive a reply.
His lawyer's response is weirdly worded, at least it seems to me:
Mr. Bolling recalls no such inappropriate communications, does not believe he sent any such communications and will vigorously pursue his legal remedies for any false and defamatory accusations that are made, he told HuffPost.
Does SMS spoofing require as much effort as email spoofing?
SMS = short messages service protocal.
SMTP = Simple Mail Transfer Protocal.
Without access to the full message headers and ISP (internet Service Provider ) it is impossible to know whether the messages were spoofed or not.
I wrote a C program years ago to read the full SMTP mail headers and check for spoofing. It was a hook into our sendmail server that warned me when someone would send a spoofed e-mail in the bosses name dismissing everyone 2 hours early for example.
Hence it is possible that
the weiner could be weiners!

Signs of spoofing can be very subtle and require someone with expert knowledge of each protocol and each client/server architecture header formats used for a message to detect inconsistencies that would indicate authenticity.
Use of PKI Keys and signatures is essential.

I seriously doubt that Eric Bolling did this. Sounds like they’re trying to frame and silence another conservative voice.
Ummm, for this type of behavior, you would know whether you did or did not. If you didn't do it, the lawyer would be saying "He DID NOT do it!". "See you in court!"

It will be somewhat telling if he doesn't pursue any legal remedies. Time will tell. I don't have a good feeling about this one, based on, as you said, the weirdly worded statement from the attorney.
