LOL on the dishwashing and sanitation techniques! One of the things I had beaten into me was how to clean up after cooking. We’d sometimes get room temperature chicken that had been cooled and then we’d prep it thinking we were going to cook it. We were told to trash it and then the instructor would test our prep counter for bacteria! Of course it was epic the amount of bacteria all over the place! It was brutal but now I always use a plastic board for prepping chicken and it goes in the washer immediately after.
