I’m going to be eating more of them for sure. I know that beet juice is supposed to be very effective for lowering blood pressure too.
I even like them just cooked and sprinkled with feta cheese, which is easier than pickling. I’m thinking that I’ll can them half of them pickled and half just plain with a little salt.
Yes, beet juice is good. I do it with carrots, celery and apple. Sounds weird, but tastes good. Pound for pound re nutrition - beets are a great crop. And easier and more forgiving than many veg. Great for a beginning gardener too.
