Why ? Peter Cushing is dead, yet he was a CGI in the latest Star Wars movie.

Actors die from time to time. If their characters are not critical to the plot line, they get written out. If they are indispensable, the producers find a decent substitute and cross their fingers that the audience will go along.

I don't see any particular reason to keep an aging Princess Leia hobbling around. I mean, it's not like it's Jar Jar who died ....

A younger version of her from the first Star Wars movies was created by CGI in Rogue One. It wasn’t very well done though in my humble opinion and the scene was very short fortunately.

Of course she was still alive at that time and able to give her permission and get paid for it too.
