There's a coffee shop at the local airport which serves them topped with grilled onions and green peppers. Amazing!
We fix this breakfast 4-5 times a week. Use onion chopper to chop up red onions, jalapeno peppers, red peppers, yellow peppers, peeled garlic from a jar, fresh spinach, fresh tomatoes. Saute until tender. Spread scrambled eggs on top, and when eggs are half cooked, sprinkle grated cheddar cheese.
Eaten with toasted seedy bread. Side dish is sauteed red potato, after microwaving until tender then chopped in small cubes. Both items get a mix of iodized salt, curry powder, cumin powder, paprika, and oregano flakes.
