Not to mention the fact that “curry” is not a flavor any more than “soup” is a flavor.
There are as many curries as stars in the sky.
It was a GIGANTIC ingredient and counts far MORE than stupid MSG, which has NO flavor at all and was introduced in the mid 20th century as a food enhancer and preservative.
AFAIK, it’s a 21rst century “foodie” thing, that hipsters were into maybe 8 years ago and some still are. I’ve never had it and shan’t ever taste it.
And I always have a bottle of pure maple syrup from Vermont! I swearI am not a liberal! Just love that flavor. It is an Americana flavor IMHO.
I have about 50 spices/herbs/flavorings that I use.
Yes, Indians have it and uses curry powder here, so do Brit transplants and those who have eaten Indian food and actonce aagin "fashioually like that stuff; however, it is NOT now, nor was it EVER a big deal in American cooking!
Chilli powder? Okay, in Texas and other Southwest states.
OTOH, paprika ( which the vast majority of American mispronounce ) is most assuredly a staple in American cooking; especially now, that deviled eggs are once again fashionable.

If the author lists garlic as a flavor ..how could she leave out onions?. I can’t imagine American cooking without onions!
Not sure this batty lefty really knows much about being a cook. There are many, MANY more flavors as staples in my itty bitty kitchen and most of them aren’t assigned to a specific ethnic food. I just throw in what sounds good today.
And really, the lefties gotta throw the mahommadans into everything. Hummus is rebranded bean dip. My bean dip usually comes from whatever leftover beans are in the fridge. Even if its a pea.

Exactly. Onions are a root plant. I can grow them here in Arizona! I can grow potatoes here, too! A little potato salad with paprika on top (the red pepper variety of paprika). Most fabulous.
The person who wrote this so-called book is a nut! She never mentioned those, either.
