First of all we're talking about Jesus, not Joseph. But in ancient Greek text he is referred to as τέκτων (wood worker) as opposed to λιθολόγος (stone mason). Furthermore in Hebrew he is identified as חָרַשׁ עֵצִים (craftsman of wood).

Yeshua never spoke anything in Greek.
Everything in Greek is a weak translation from the original Hebrew, done by using the LXX as a translation guide.
Any Hebrew test that is back translated from Greek is bound to contain the same errors as the Greek.
