No I am unaware of any school like this that is in the North East corner of Scotland, as it appears to be offered on the collegiate level.
However, the outdoor skills and leadership seem to be offered by Outward Bound, which includes some of the bushcraft lessons, also there is a bushcraft school in Tennesse.
Observing and active participation are the greatest learning lessons, however many of these skills can be found in the Fox Fire books,and the 60's and 70's Boy Scout manuals.
The next best school of adaptability and bushcraft would be found among the native American population in your area, or through ethnographics at your local library.
