The eggs add a subtle flavor of their own, and are a nice colorful addition to the plate........................
My mother’s brother was married to a Latino woman, she made spaghetti sauce with egg. I had never had it before or since but it was outstanding! I wish I knew how (or why) she added eggs.
Eggs are a must.
