Well, I don't recommend that strategy. It assumes Microsoft got everything right the first time. We know for certain that isn't true.

Without any updates:

  1. You're missing bug fixes. Over time, the updates fix errors in the software and without the fixes, the bugs could cause you problems.

  2. You're missing security fixes. If you never go on the internet with that machine, great, but if it's connected to the internet and you visit websites, having the security patches is important.

I have my laptop dual booted with Linux and Win 8.1.

I’ll be using Linux much more and Windows much less.

To each their own.
